Then we thought how much money can be spent on pharmaceutical dietary supplements when you can make something yourself.
For several years we have been making pumpkin flour from peeled pumpkin. We would only know what we are throwing away! Rumors about the benefits of pumpkin peel were circulating, but somehow they did not reach much. Last year they made such flour from pumpkin skins. They put it in a jar and forgot about it.

The research was carried out on the basis of an agricultural institute. Ussuriysk (Primorsky Territory). The pumpkin is grown there in different varieties. The chemical composition of the peel was very different between varieties. The peel was hard in some varieties, and soft in others. The thickness of the peel is from 1.5 to 2 mm.
The regularity inherent in all vegetable crops has been confirmed:
The peel contains fewer sugars, but more mineral and pectin substances and fiber.
The varieties differ significantly in the content of b-carotene. There can be as much of it in the peel as in the pulp, and in four varieties, the peel contains several times more b-carotene.
The content of vitamin C in the pulp of different varieties is from 4.1 - 13.3 mg / 100 g, and in the peel, respectively, from 6.8 - 12.4 mg / 100 g.
The amount of pectin in the pulp and peel is about the same, it does not significantly depend on the variety.
Of the minerals (the ash of the peel of various varieties was investigated), most of all calcium and magnesium salts. There are zinc salts, much more than in the pulp. The concentration depends on the degree of drying.

So, what is in pumpkin peel, and why do we need it

- Zinc is indispensable for the health of skin, hair and nails, helps with prostatitis
- Carotene prevents the occurrence of malignant tumors, improves heart function
- B vitamins, rare vitamin K - quite famous
- And the rare vitamin T is a fat burner that transports fatty acids into the cell, and oxidation products from the cell are produced in the human body. Our good mood and muscle gain are not complete without it.
Will I make pumpkin rind powder
I won't. And you? I will explain my position.
- I'd rather eat more pumpkin. It contains less of the same substances as the peel, but they are!
- We do not have a panic about health, we do not buy dietary supplements in pharmacies.
- The grinding process seems to me to be problematic, we do not have a good coffee grinder. And if I was, I would be afraid that it would break.
- I do not throw out the peel, I send it to compost, where it lives its natural life. Over time, I will add it in the form of compost for vegetables.
