Jellied fish from Margarita Simonyan. Made according to her recipe - tastier than ever tasted
I just never understood jellied fish before. Either from the "Irony of Fate" there was an impression of Hippolytus - "... what disgusting your aspic fish ...", or the fish was taken the wrong... And most likely it was not cooked like that.
December is rich in corporate events. No, we celebrate not only in our team. We serve legal entities. On New Year's Eve we go to congratulate our clients with gifts. There they are always waiting for us... with reciprocal gifts and glasses... Few let go without a toast.
Recently, my favorite clients invited me to their purely female corporate party, which they were going to hold in the country house of the head of the organization. Everything was well organized there, all the products were bought and the employees cooked themselves, and I arrived practically when the table was already laid. All food and drinks were delicious. But the jellied fish (which I initially ignored at the table) simply shocked me with its taste.
The girl who cooked this miracle also turned out to be a fan of Margarita Simonyan. She confessed to me that she did everything according to her recipe, and her husband smoked the fish. I don't know how I missed this dish in my feed, but after scrolling through a bunch of posts, I found the very recipe. Therefore, I will cite as a quote from the speech of Margarita Simonyan:
Jellied fish - where are those born in the USSR without it?
⠀
This time we will take red fish - salmon, or coho salmon, or chum salmon, pink salmon - we will divide it into two parts. One part we will smoke. The rest - boil with onions, carrots, parsley, dill seeds and black pepper.
We smoke fish at home. Marina (most often with honey and pepper), I hang it for the night in the cellar, the next day I smoke it in the grill-smokehouse in the yard.
⠀
Put green peas, pieces of smoked fish, pieces of boiled in the bowls. Strain the broth, add gelatin, fill in the fish.
⠀
How are you doing?
