I recently learned that it turns out that keeping eggs in the refrigerator is dangerous. Having delved deeper into this area, and after reading several articles on this topic, I was convinced that this statement is true.

Why people began to store eggs in the refrigerator

It turns out that only people living in the post-Soviet space keep eggs as usual. Indeed, earlier, due to the distance between the points of distribution of products and their production, and in order to increase the shelf life, they were removed to refrigerators. At room temperature, eggs remain fresh for a very short time, about 10 days, but in the refrigerator this period increases to 45 days.

What happens to eggs when stored in the refrigerator

European doctors say that storing eggs in the refrigerator leads to the accumulation of various microorganisms on their shell. Because the temperature when placed in the cold varies greatly for the product, and then we take them back into the heat rooms, and since the shell is not completely impervious, these bacteria get straight into the egg, which we then we eat. This is what is dangerous to human health.

So, the legislation reduces the term of the product, but protects its citizens from various bacteria that have accumulated on the shell. Therefore, Americans store eggs in refrigerators because of such treatments.

As I said above, in European countries, people store eggs at room temperature. In general, in many EU countries there is a ban on processing eggs. Doctors say there is no need to destroy natural barriers to fight infection.

In Russia, eggs do not undergo the same processing as, for example, in the USA, but in our country they try to kill all diseases and bacteria at the production stage. Various vaccinations of animals and birds and product processing are carried out.

How do you keep eggs?

Judging by these statistics, I realized that in general eggs can be stored in the refrigerator if you do not want to use them right now. But you need to adhere to some nuances, for example:

• It is best to store eggs in containers and away from strong-smelling foods;
• Laying eggs, preferably not on the refrigerator door, but closer to the back wall;
• After removing the product from the refrigerator, wash it before use.

Precisely BEFORE USE, and not before you put it in the refrigerator. Because when processing with hot water and soap, the shells can crack or the film shell of the eggs, which protects them from bacteria, can be damaged.

These are the conclusions I made for myself when researching this topic. I will not stop storing eggs in the refrigerator, but I will be more careful with them in terms of processing.
