Why don't tomatoes from their garden smell, and neither do peppers

There are quite a few varieties of tomatoes without aroma. And even with peppers it happens. What kind of phenomenon? I began to look for information.

Previously, the aroma was always there when you cut peppers and tomatoes
Previously, the aroma was always there when you cut peppers and tomatoes

First of all, I asked a question on the forum and received such a competent answer from expert Vasily from Kostroma:

“The smell of vegetable pepper is given by the glycoside capsaicin, and the tomato is given by lyconin and a number of other substances. But for the smell to be there, at least some of the fruit's sugar must be fermented into alcohol. Your perfume isn't for nothing, is it? And for this process to take place, you need heat, you need to have more sugar in the fruits. And it is necessary that the cell walls would be thinner, otherwise the thick ones will block everything.

Therefore, you need the sun, warmth. And old thin-walled fruits. "

This answer echoes the information I dug up on the Internet. True, there was nothing about pepper at all, I was content with tomatoes.

First version

There was not enough heat, the tomato was picked prematurely. In particular, the flavor of the tomato will disappear when stored in the refrigerator.

Indeed, a lying and ripened tomato loses something, and first of all, its aroma.

But! I had some varieties and hybrids were odorless at the best scenario, ripe right after picking up in the greenhouse.

It happens that the plant did not have enough to increase the mass, for good taste, so, maybe the tomato lacked something for flavor. Vasily (quote above) explained what exactly is missing.

Second version

Aromatic tomatoes grow on natural fertilizers, odorless on mineral fertilizers. To confirm or deny this version, your help is needed. From your own experience, do you think this is the correct version or not?

Here I will also include the opinion that I often read: tomatoes are more aromatic in the open field.

One experiment is not enough here, statistics are needed. If, for example, some have a fragrant variety, while others do not, the reason must be sought in the soil and agricultural technology. Please share what varieties of tomatoes and peppers do you have? And why do you think?

Let's leave it like this for now: the flavor of the tomato depends on the growing conditions.

Third version

Scientific articles are rarely posted on the Internet. Therefore, all information from the media. Doesn't sound like fiction.

The Chinese have identified 33 aromatic compounds in tomatoes (an agricultural institute at the Chinese Academy of Agricultural Sciences in Shenzhen, one of the authors of the study, Sanwen Huang).

Found out that genes influence the taste and aroma of tomato. There is no doubt about it! A decrease in the concentration of 13 volatile aromatic substances has been noticed in modern varieties. This is compared to older varieties.

Since farmers are least of all interested in the smell of tomatoes, and the taste suits for three plus, then, of course, for them bred varieties and hybrids that are stable, fruitful, stable, leveled, beautiful, and the aroma remained with the breeders for board.

As I read about tomatoes, it is rarely, rarely mentioned that the variety is aromatic. This is rare for amateurs, and probably never for farmers.

The only people who are professionally interested in the scent of tomatoes are perfumers. The leaves and seeds of our favorite vegetable have long been used for the benefit of the perfume industry. Although more often they reproduce the flavor of a tomato artificially.

This year I hope to grow almost 100 varieties of tomatoes, I will look for fragrant tomatoes with a passion, and I will write the result.

Conclusion so far: when breeding, aromas are often lost.

My observations to date

I was 15 years old. One day my father brought home a bucket of brown-orange tomatoes from his dacha. As soon as they began to lay them out, the room was filled with aroma, and the mother from the kitchen shouted that she had an allergy, so that they urgently took the tomatoes to the balcony. Which is what we did with my father.

And I noticed that aromas of tomatoes are found in the pollen on the skin of a tomato. This is a very allergenic thing. Tomato leaves smell exactly the same. I love this smell!

Leaves always smell like that when touched. Perhaps pollen is not genetically produced on fruits, hence the loss of aroma in many varieties. And foliar chemical treatments can influence. Sometimes it's scary to read how tomatoes are sprayed on the advice of agronomists.

And for allergy sufferers, it turns out, odorless tomatoes are a godsend.

Oh good! We cut any tomato from the garden and... A gentle fragrance appears! Always. The seeds smell, or juice, or pulp, I don't know. That is, not everything is bad!

I look forward to your opinion :)

I would be grateful for your subscription and communication :)
