What can a person who is far from cooking can cook? Most likely, a standard set of dishes: scrambled eggs, dumplings, boiled sausages. Would you believe if we say that there is a recipe according to which even a schoolboy can cook a juicy chicken with a ruddy crispy crust? There is such a recipe and we will tell you about it!
What is necessary
The recipe is so simple that you only need two essential ingredients: chicken (1.5-1.7 kg) and 1-2 kilograms of salt! Of the tools, only long wooden skewers or a small piece of foil are useful.
Important! Take only ordinary table salt. Not iodized and not Extra! Purchase chilled or fresh chicken for this recipe. Not ice cream! Make sure that the chicken is not damaged skin!
How to cook
Wash the chicken, dry it, wipe it thoroughly from the remaining water inside and outside. Pour the salt onto a baking sheet and flatten. The salt layer should be at least two centimeters!
Put a grid of skewers on the salt and put the carcass on it. The chicken must not come into contact with salt! If you don't have skewers on hand, place the carcass on a small piece of foil.
Put a teaspoon of salt inside the chicken and rub it into the evisceration area. Simply put - rub the salt inside the carcass.
You can limit yourself to this and send the chicken to the oven. But there is an option to add additional flavor to the dish. To do this, place a head of garlic, peeled from the top coarse husk, or one lemon inside the carcass.
Next, preheat the oven to 180 degrees and set the chicken to bake for one hour. After an hour, add the temperature to 200-210 degrees and bake for another 20-25 minutes. During this period of time, a delicate crisp crust is formed. After the specified time has elapsed, the dish is ready!
What role does salt play
Salt absorbs excess moisture and fat - nothing burns in the oven and, accordingly, there are no unpleasant odors. The moisture evaporating from the salt creates a steam treatment effect, which speeds up the cooking time.
The salt layer heats up (stores heat) and creates a stable heat around the chicken. It also has a positive effect on the formation of a crispy, aromatic crust.
In addition, salt draws water out of the skin, thickens and dries it out. Thus, the dense crust retains moisture in the meat, making it juicy.
