Shish kebab is a dish that is prepared in advance. The minimum is 4–6 hours. But what if you made a spontaneous decision, and you don't want to wait until the meat is marinated? For this case, there is an express marinade recipe, which we will share with you.

“Once I was in Kalmykia and my local colleagues decided to treat me to a real barbecue. Imagine my surprise when I learned that the meat is still "alive", and we will fry the kebab in an hour.
Everything happened as follows: the ram was slaughtered and butchered in my presence, the meat was marinated with onions, salt and pepper for literally 20 minutes and then sent to the grill. The kebab turned out to be just wonderful!
Of course, I wanted to adopt such a method, but I have no opportunity to buy meat alive and butcher. Therefore, I began to look for recipes for express marinades. Empirically, I came up with one method, which I'll tell you about. "

What kind of meat is express marinade suitable for?

The recipe is suitable for pork, lamb, chicken, turkey. I experimented with beef, but I didn't like the result. Beef kebab is a separate type of cooking art that I have not yet mastered.

What is needed for the marinade?

The ingredients are calculated for one kilogram of meat. So, we need:

  • salt - 3 tablespoons;
  • warm water (temperature 35–40 ° C);
  • 1 medium onion;
  • 2 cloves of fresh garlic
  • 2-3 bay leaves;
  • 1 bunch of cilantro or basil
  • ground black pepper - 1 teaspoon.

How to pickle?

First of all, you need to prepare the meat: cut into pieces the size of ⅔ of a cigarette pack. Chicken wings, thighs and drumsticks can be marinated whole.

Stir the salt in warm water until it is completely dissolved. Then cut the onion into rings and chop the herbs. Mash the onions and herbs together well with your hands.

At the last stage, place the meat in warm salt water; add onions, herbs and bay leaf there; squeeze the garlic and add black pepper.

All this carefully, but without fanaticism, knead with your hands for 2-3 minutes. Leave to marinate at room temperature for 20 minutes. During this time, the meat will have time to absorb salt, as well as aromas of onions, herbs and spices.

After this time, the kebab can be strung on skewers and sent to the grill. Remove leftover onions and herbs from the meat before cooking to prevent them from burning. Bon Appetit!
