How to make a great smoker from an old gas stove in 20 minutes

Why is a gas stove with oven ideal for hot smoking?
The oven of a gas stove is a thermally insulated chamber that can withstand high temperatures. The principle of its operation is simple: the flame of the burner injects the heat necessary for cooking, which is concentrated in the inner container and has a thermal effect on the product. In this case, the flame of the burner does not have direct contact with the product. This is the process of closed baking.
These functions of the gas stove are excellent for hot smoking, which, in addition to heat exposure (closed roasting), involves fumigation with smoke. But in the case of a smokehouse, the source of heat will be wood, and the smoke will be produced by special shavings / wood chips that smolder inside the oven. The smoke serves as both a flavoring agent and an additional preservative - smoked foods are stored longer.
How to make a smokehouse from a gas stove?
This is very easy to do. But, before you start, you need to find a fireproof place for a smokehouse. It can be placed on a concrete platform or bricks. It is important to maintain a safe distance from flammable substances and buildings made of combustible materials.
What should be done:
- Level the stove. Open the oven door, remove the trays and wire racks.
- Lift the bottom of the oven (cover that covers the burner) and remove the burner - it is not needed. Replace the bottom.
- Place the baking sheet in the lower runners and the wire rack in the center runners.
- Remove the dryer cabinet door. It stands at the bottom under the oven door.
At this point, the hot smoked smokehouse is ready to use! All that remains is to collect recipes and create the freshest delicacies!
How to smoke fish hot smoking method?
Let's take a smoked mackerel recipe as an example.
- Take 2-4 carcasses of freshly frozen mackerel, defrost.
- Remove the head and offal, rinse and dry the fish.
- Rub the carcasses on top and inside with salt and black pepper. Let it soak in the spices for 20 minutes.
- Place the fish on a wire rack in the smoker (oven).
- Make a foil envelope and place 50–70 grams of wood chips in it. Choose your own wood chips - oak, alder, cherry or apple.
- Wrap the envelope and place it on a baking sheet in the smoker (oven).
- Place the stoves (under the oven) of the wood underneath and light. Throw in firewood as needed - the oven should warm up well. When the cabinet is heated, the wood chips in the envelope will ignite and begin to smolder, emitting fragrant smoke.
- Smoke the fish for 40-50 minutes. After this time, take out the finished dish and serve!
Thus, you can cook not only fish, but also poultry, meat, as well as homemade sausages and sausages. In fact, hot smoking is the same closed baking, but only seasoned with a fragrant smoke.
