Why do I first soak nuts in water, and only then eat them

I love crunching nuts, both fried and raw. And, even if I rarely can afford macadamias, cashews and other exotic things, then on my table you can always find both almonds and a simple walnut collected from a tree opposite the house. I would have continued to eat them as usual, until the nutritionist explained to me - before eating them raw, it is better to soak the nuts in water. It is in this form that they show most of their useful properties.

As a specialist explained to me, raw nuts are not very well absorbed, so most of the nutrients are excreted along with the rest of the digested food. I had no idea that phytic acid is the culprit for this process - it is she who preserves the nutrients in the nuts, preventing them from giving off nutrients. Water washes it away, so nuts soaked in water are healthier than those that we are all used to eating.

In contact with water, the nut gradually begins to lose phytic acid and begins to activate the growth process. At this time, he throws out the maximum amount of nutrients, but you should not store nuts in the refrigerator for more than 3 days - mold appears. Therefore, nuts soaked in water are not suitable for long-term storage.

If you do not know how long you can store nuts soaked in water, I will share a secret. Light nuts such as cashews are soaked for 2-3 hours, while dark nuts such as pecans, almonds, Brazilian and walnuts are soaked overnight. Before use, I dry them with wet wipes, then I use them both raw and together with muesli, curds, milk. Such nuts become sweetish and bitterness leaves them, moreover, they are easier to peel.

But recently, my friend shared with me a secret that allows her household not to get sick during the cold season. This delicious vitamin blend that can be kept in the refrigerator for a year, in my opinion, can replace nut butter and more without harming your figure. I prepared it like this:

  • I take a kilogram of walnuts soaked in water, peeled and dried with a paper towel;
  • The same amount of honey;
  • Half a kilogram of ghee, better than country butter.

I mixed honey and butter until smooth, filled the soaked nuts with it, put it in the refrigerator and eat a teaspoon on an empty stomach. You can spread it on bread and eat it during breakfast, saturating the body with vitamins and minerals. I don’t know about you, but for my friend this mixture helped to protect her body from colds. In addition, I noticed that my hair, after using this mixture, became more shiny.
