How can you save and what to make from birch sap.
Here sap from birch has been collected and quite a lot of it. You can drink a certain amount of fresh juice, but it's still difficult to drink more than a liter.
There are several options for using this drink. The easiest way is to pour it into plastic bottles and put it in a cool place.
Then in the summer, birch kvass will already be ready. Yeast is not needed here, since it is already contained in natural juice. Because of this, natural juice is not stored for a long time. Those that are sold in stores come with added preservatives.
Birch kvass perfectly quenches thirst in the hot season, you can make okroshka from it. The juice can also be concentrated, and then freeze it and, if necessary, drink it, diluted with water or in a concentrated form.
However, the content of nutrients in such a concentrate does not exceed 2%. And it is inconvenient to store juice in large quantities.
The juice can still be evaporated, for this it is necessary to heat it up, but after that useful vitamins can be destroyed.
Another method of preserving juice is known. To do this, you need a saucepan made of non-oxidizing material, with high thermal conductivity (suitable for stainless steel or with an enamel coating).
Pour freshly harvested birch sap into this pot and cover with a material with low thermal conductivity, for example a regular wooden board, and place in the freezer.
After several hours, you can observe the following situation: the drink will freeze from the edges to the center, and a mound with a loose, usually not yet frozen liquid will form in the middle.
It is slightly different from the rest of the ice, having a yellow-green color and a sweeter taste. This mound should be taken away, since it is not completely frozen, it can be easily scooped up with a spoon.
This method makes it possible to increase the concentration of beneficial compounds, sugars, minerals and vitamins.
The resulting concentrate can be bottled and frozen.
