How to determine the ripeness of onions and garlic

In order for the harvest of onions and garlic to be stored for a long time, these vegetable crops must be removed in time. It is necessary to determine the timing of harvesting as accurately as possible so that the crop is not underripe or overripe.

One sure sign speaks about the ripeness of the heads of onions and garlic - if more than 60% of the tops of these crops have turned yellow and died, then the heads are ripe and the crop can be harvested. Garlic has another indirect sign of ripening - cracking of the inflorescence bedspread.

Drying

After harvesting, the crop must be dried. To do this, you should clean the heads from the earth and excess husk, remove the tops and roots. Do not completely delete the arrows! Leave 5 centimeters for the onion so that the head can close, and 2 centimeters for the garlic. But you can leave the tops of the garlic so that it can be stored in pigtails.

Next, you need to scatter the heads in one layer in a dry and well-ventilated place. The best way is to put the vegetables in plastic vegetable crates with mesh bottom and walls, and place them in the gazebo. Onions and garlic dry for 4 to 10 days. Drying time depends on the temperature and humidity of the environment.

Temperature conditions and storage methods

Onions can be stored well at 6-18 degrees in any ventilated area. For long-term storage, the onion heads should be folded into plastic vegetable boxes in 2-3 layers, or put in a nylon stocking or a cotton pillowcase. A stocking or pillowcase with a bow must be hung up. The crop should be checked every two weeks and the rotted heads should be sorted out if they appear.

Garlic is a more capricious vegetable to store. He needs a temperature of 2-4 degrees and humidity not higher than 70%. At high humidity, garlic absorbs water, after which it begins to germinate and rot. To preserve this vegetable until spring with minimal losses, it must be folded into vegetable boxes and placed in a dry, cold, frost-free room.

Original ways to store garlic

Garlic keeps well in vegetable oil. To do this, you need to peel the cloves from the husk, place in a jar, fill with any vegetable oil and close the lid. Banks should be kept cool. Thus, the garlic will retain its properties and taste, and the oil will acquire a unique aroma.

And garlic is also well stored in flour. To do this, you need to place the heads of garlic in a jar or saucepan and cover it to the top with ordinary wheat flour. Containers with garlic in flour should also be kept in a cool dry place.
