Why is the kitchen built separately in Uzbekistan?
We are accustomed to the fact that in our private house in Russia, the kitchen is always its integral part. But this is not the case everywhere. In Uzbekistan, the kitchen is located at some distance from home. Why is that?
Hot climate
It is warm in Uzbekistan for more than 7 months. And in summer it's such a sweltering heat that you don't want to go outside again at midday. And it is better to cook food in a room that is easy to ventilate, since it is located separately from living rooms. Moreover, the heat from cooking food will not penetrate into a cool room.
Tandoor
Uzbeks living in private houses rarely buy flat cakes. They bake bread and many other delicacies at home, in a special oven called "tandoor". It is being built from clay, not far from the kitchen.
The tandoor can be vertical, as in the photo, or horizontal. Vertical ovens are most often found in private homes. And the hostesses bake flat cakes for the whole family 2-3 times a week, as well as prepare some national dishes.
And horizontal ones are mainly used in catering establishments, teahouses. The chaikhana keeper sits on top of this oven and, as needed, takes out the finished baked goods, and in return "sculpts" dough or meat blanks on the walls. In such tandoors, they bake samsa pies, prepare barbecue and much more.
Food on the hearth
Uzbeks also love food cooked over a fire. And in every private house there is a hearth not far from the kitchen. In winter, it is brought directly into the room. The hearth is heated with wood or coal. Therefore, every spring the kitchen has to be whitewashed again. For this reason, paint is not used in the kitchen.
Insects
No matter how clean it is, there are still food and water residues in the kitchen. Therefore, insects penetrate there, of which there are a lot in Uzbekistan. And so that they do not crawl into the living rooms, the kitchen is built separately.
There are pros and cons to this layout. Of course, everything should be taken into account, taking into account the climate and national customs. I think that in Russian realities it would be difficult to run from the kitchen to a residential building when it's 20 on the street.
