There are several options for how to deal with this. You can pull out large weeds and additionally plant lawn grass. Then, literally in a week or two, you can get this look:
Ideally, use moss instead of grass seeds. But is it possible to plant it on purpose, because it reproduces by microscopic spores. Moss loves moisture - care is also needed. In any case, on such paths and sites, you will have to regularly mow the grass as well as on the lawn. Otherwise, the paving stone will look completely unkempt. I think it will be impossible to achieve such a smooth and beautiful picture with minimal gaps. Such a lawn grass pattern is obtained by laying paving stones with a large gap, with gaps of at least a centimeter. And in the spring, when the soil underneath is liquefied, paving stones with large gaps will be unstable to stress.

Further, so that the grass no longer grows for at least a year, the paths are treated with chemistry. You can buy it from seed stores or use homemade baking soda or vinegar solutions.

Someone will ask the question: why can't you use a conical cord brush from an angle grinder? The fact is that they are of smaller diameter: 100, 115, 125 mm and with a nut for screwing onto the shaft specifically for the grinder.

If the paving stone is made by casting, with a smooth surface, then such a brush will leave scratches and ruin the look. A nylon trimmer brush is suitable for these paving stones:
