As on Mars there is no life, so in the usual shop sausage - meat. It's high time to acknowledge this fact and stop spending money on what our chain supermarkets call affordable sausage. If you want a meat delicacy, make it yourself. Today we will tell you how to make delicious homemade ham according to a very simple recipe.
What is necessary
Any pork meat (ham, chop, neck) weighing 1.5-2.5 kg is suitable as the main ingredient. And the following seasonings will also be needed: coarse table salt; nitrite salt; your favorite spices. At the final stage, you will need an oven.
This dish requires exactly nitrite salt - not to be confused with nitrite! Nitrite salt is a preservative - a safe food additive that is used in the production of sausages. The preservative ensures the safety of the meat product - prevents the development of botulism, and also enhances the taste, aroma and color of the meat. You can order nitrite salt at any online store.
How to cook
- Grate a whole piece of meat thoroughly with a mixture of nitrite and table salt. Ratio: nitrite salt - 1 part; table salt - 1 part.
- Next, wrap the meat tightly in plastic wrap and refrigerate for a week. It is necessary to wrap it in several layers in order to limit the supply of oxygen to the meat product as much as possible.
- After a week, remove the meat from the foil, grate and sprinkle with spices. As a basic option, you can use a mixture of black and red pepper and dried garlic. But you can use any dry spices that you prefer.
- Put the seasoned meat on a baking sheet and bake in the oven for two and a half hours at a temperature of 80 degrees. Temperature is important in this recipe. Set the oven to 80 degrees - no more, no less!
- After baking, the ham is ready, but it needs to be refrigerated. To do this, first cool it for 2 hours at room temperature, and then put it in the refrigerator for 8-10 hours. After the specified time, the delicacy can be served on the table. Bon Appetit!
