As I ventured to make elderberry jam

In just a few years, picking in the garden, becoming, as I thought, already an expert in horticultural, I was surprised to learn from the internet that the elder is of various kinds, among which there are also edible.

Well digress. After learning more about the elder, I found out that there is a "black elder," which is a very useful and in fact on the medical properties better raspberries. When I heard about this a couple of years I scoured the local nursery seedlings outlandish bush, trying to buy black elder, but no where could not find - whether the plants were already sold out, whether all traders do not know what it happens. Desperate to buy a wonderful elder, I quit looking.
This year, I drew attention to their elder bushes. To my surprise, my elderberry were bright black. You have to understand my fears, from articles about elder I know that in most cases, ie 99% of species of elderberry - poisonous berries. And with the poisoning occurs after consuming a very small amount of berries.
Went I went in circles around its sprawling elder and decided to take a chance. Think I'll make jam from his elder, I will try, maybe not die.
All the while confused by what is not in the nursery seedlings of black elderberry, but I was in the nursery and bought their bushes, and then my elder should not be black, once a sale is not.

I gathered this year in early October, 1 kg of berries with his elder questionable. Decided, I'll make jam.
Recipe jam Elderberry simple. 1 kg. berries, 700 grams. Sahara.
I washed the twigs with berries, berries detached from the sprigs, fill with sugar and leave for the night. Berries in the morning was given juice and sugar sold. Mix everything, I gave to stand still for an hour to sugar grains do not crystallize during the jam boil. Simmered mass brought to a boil, reduce the heat to a minimum and baked 10 minutes. He removed from the plate, left under the cap until the evening. In the evening, again heated to the boiling point, sustained for 10 minutes and then left for the night. Morning while preparing breakfast, delivered almost ready to jam on a plate, add a teaspoon of citric acid (for long storage) and cooked jam over low heat for about 15 minutes.
I spread the finished product to the banks and you're done.

Well, prepare to eat will not paint. Frankly, dumb.
